
It doesn’t take much for me to crave Mexican food, or any variation of South American cuisine, so eating it the morning doesn’t sound weird to me at all. Today I was in the mood for some soft poached eggs on toast – super boring, but healthy. However, as with most days, we didn’t have any bread in our house. We aren’t massive sandwich makers, so if we have bread it’s likely burger buns or mini ciabatta loaves. But, I wanted my eggs, and I wanted something to sop up the runny yolks. I did have blue corn tortilla chips… and that’s when the idea for Breakfast Nachos was born! Keep reading to see my super simple 5-minute 3-Ingredient Recipe 🙂
Ingredients
- Two Eggs
- Handful tortilla chips
- Salsa
- *Optional – fresh-cut avocado or guac, hot sauce
Directions
- Boil a small pot of water, add 1 tbsp white vinegar ( I find this makes the best poached eggs)
- Crack eggs and carefully drop egg into the water (not the shell, people!)
- Set timer for 4 minutes
- While your eggs are poaching, prepare your nacho bowl
- Spread out your tortilla chips
- When eggs are ready, transfer to a plate covered by a paper towel to soak up excess water
- Place eggs onto tortilla chips
- Dress with salsa and/or avocado, guac, or salsa
- Devour!
