  I’m no food blogger but I love to eat, and sometimes I even love to cook ;) When I do cook, baking is usually the route I take because it is just so much easier (aka I don’t have to pay that much attention to my dish once it’s in the oven). Quick & Easy Breakfast Nachos

It doesn't take much for me to crave Mexican food, or any variation of  South American cuisine, so eating it the morning doesn't sound weird to me at all. Today I was in the mood for some soft poached eggs on toast - super boring, but healthy. However, as with most days, we didn't have any bread in our house.
